Method:

To make soya veg biryani, first, soak the soybeans in water for some time. Then filter it and take it out in a bowl. Now chop all the vegetables and mix them with soybeans.

Then add ginger garlic paste, curd, cumin powder, and salt to taste and mix it well and leave it for ten minutes.

Now put a pressure cooker on medium flame and let it heat up, add oil and once the oil is hot, add onion and fry it in it, then add cardamom, cloves, cinnamon, black pepper, and bay leaves to the remaining oil and fry these spices a little bit. When it is fried, add the mixed vegetables to it and fry it on medium heat.

When the vegetables are fried, add half-cooked rice, then add roasted onion on top of it. Now put some more rice on top of it and put saffron milk over it. Now add the remaining rice, roasted onion and a little bit of coriander. Cover it and let it cook for at least thirty minutes.

Now cover the cooker and cook it on medium heat. Turn off the gas after thirty minutes. Your tasty Hyderabadi soya veg biryani is ready, take it out in a plate and serve with chutney or raita.
